Easter time is all about family time and the perfect excuse to get together and share a beautiful meal! Ideally you wouldn’t want to spend hours in the kitchen whilst everyone else is enjoying themselves and gorging on Easter chocolates; so, we have created a list of interesting get relatively easy to make side dishes.
Chilli Soy Green Beans
A slightly different take on your classic French style green beans, you simply pop these in the pan with some olive oil and once they’re mostly fried you can add some soy sauce, chilli flakes and chilli oil. Leave that to simmer for a couple of minutes and you’re ready to go.
For this salad, all you’ll need is some fresh broccoli, dried cranberries, sunflower seeds, diced onion and bacon bits. All of those ingredients can be tossed together and then a dressing of apple cider vinegar, sugar and mayonnaise can be poured over it and mixed together.
Thinly slice your zucchini and layer it in your dish with grated cheese (a cheddar or gouda would be perfect), once you have your layers you can pour your homemade cheese sauce over the dish, we love to use a brie and cream mixture to make the sauce. Layer the top with more cheese and dried herbs and then place the dish in the oven for about 30 minutes.
Lemon Honey Glazed Carrots
We recommend slicing the carrots diagonally for this recipe or alternatively using baby carrots; place your carrots in a heated pan with olive oil, salt, pepper and dried herbs. Cover them and allow them to cook for 20 minutes until tender, mix your lemon and honey together on the side and then pour the mixture over the carrots and allow them to cook uncovered for 10 minutes until slightly caramelized.
Bacon Jalapeno Deviled Eggs
Hard boil your eggs, fry and dice your bacon and dice your jalapenos; once your eggs are boiled you should cut them in half and removed the yolks into a bowl. Smash up the egg yolks, add mayonnaise, mustard, rice vinegar and sugar, mix it all together and then add in your bacon and jalapenos. Spoon the mixture into the whites of the eggs and top with bacon, jalapenos and paprika.
Goats Cheese Whipped Potatoes
Boil and peel your potatoes, mash up the potatoes in a bowl with some butter, salt and pepper, add the goat cheese of your choice and use an electric beater to whip it all together. You may want to add some chopped chives to add an extra element to the dish.
Blueberry Feta Salad
For this salad, all you will need is baby spinach, sliced cucumber, almonds, thinly sliced red onion, blueberries and feta. Just toss them all together or layer them and you’ve got and interesting and fresh summer salad.
You can really use whatever combination of cold meats, cheese and vegetables that you like but our favourites are with de-pitted olives, mozzarella balls, peppadews, salami and cherry tomatoes. The perfect snack on a stick!
